Healthy Recipe - Salmon Hand Roll

Ingredients

  • 1\2 cup cooked short grain brown rice
  • 1/2 tbsp salt
  • 1/2 lemon
  • 1 tbsp rice wine vinegar
  • 2 sheets nori
  • 1\2 avocado, sliced thinly
  • 1 Persian cucumber, sliced thinly lengthwise
  • 4 oz sashimi-grade fillet sliced into long chunks

Rub salt into the salmon and sprinkle it with lemon juice. Leave it for an hour for the salmon to absorb salt. Cook rice according to package directions. Drain the rice. Add vinegar and toss to coat. Lay two sheets of nori, shiny side down, on a mat. Sprinkle with water to make them a little bit wet. They become sticky. On each sheet add rice, pressing it gently until it is evenly distributed. Place remaining ingredients in a horizontal line down the middle, overlapping if necessary (divide all the ingredients in two even portions, one portion per nori sheet). Roll nori keeping the ingredients inside. Grip the roll hard to make sure it's tight and closed.
